2 tbsp olive oil
2 yellow onions chopped
1 green pepper chopped
1 broccoli stem pealed and chopped
1 cup shiitake chopped
4 cloves garlic chopped
1 can chick peas rinsed
2 cups of water
2 tbsp basil
1 tsp green curry paste
Salt
Sautee veggies. Add chickpeas and water and simmer. Purée soup and mix in basil and paste. Salt and serve or chill and serve.
